Green Lentil Salad

This salad is great for Summer, inexpensive, yummy and quick to make. Perfect for lunch or dinner.
FACT: Legumes have high iron content, which is beneficial in non-meat diets. One cup of French green lentils contains approx. 100% of your daily recommended intake of iron.

Cook time: 10-15 mins

INGREDIENTS – Salad

  • 1 cup dried green lentils
  • 250g cherry tomatoes
  • half a cucumber
  • 1 red onion
  • 1/4 cup coriander
  • 1/4 cup parsley
  • 2 handfuls of rocket
  • feel free to add in or substitute any of your favourite salad ingredients eg. olives, beans, spinach leaves
  • 90g feta or halloumi
  • pine nuts or walnuts
  • pita bread (optional)

INGREDIENTS – Lemon Dressing

  • 2 teaspoons lemon zest
  • 2 tablespoons lemon juice
  • 1/3 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1 garlic clove
  • 1 teaspoon sugar
  • salt and pepper to season

METHOD

  1. Cook the lentils as per the packet instructions, drain and rinse them and set aside.
  2. Lemon dressing: Finely chop the garlic (or use a garlic press), in a small bowl or jar mix all of the dressing ingredients together. Set aside.
  3. Cut the cherry tomatoes in half, slice cucumber into half moons. Finely chop the red onion, coriander and parsley.
  4. In a large bowl mix the rocket leaves, tomatoes, cucumber, onion, coriander and parsley with the lentils and any other salad ingredients you choose to add.
  5. Pour the Lemon Dressing over your salad and toss gently to coat.
  6. Serve topped with the feta (or grilled halloumi), some pine nuts (or walnuts) and some warm pita bread.
